Ingredients:

  • 200 g dark chocolate
  • 250 g plain biscuits
  • 150 g butter (at room temperature)
  • 2 medium-sized eggs
  • 10 g cacao powder
  • 70 g icing sugar
  • 30 ml rum
  • sprinkle of icing sugar to decorate

Instructions:

  1. Cut the dark chocolate up into small pieces. Add to a bowl and melt, either in the microwave or bain-marie.
  2. Leave melted chocolate to cool and in the meantime, break up the biscuits with your hands. The biscuits pieces should be between 1-2 cm, not too big and not powder, either.
  3. In a separate bowl, add the room-temperate butter and mix with a spatula to soften. Add the icing sugar and mix into a smooth paste.
  4. Gradually add the melted chocolate to the bowl with the butter and icing sugar. Mix well.
  5. Add the eggs and give everything a good mix. Then add the rum and mix again.
  6. Using a sieve, add the cacao powder to the mixture and mix until you have a smooth texture.
  7. Add the biscuits, taking care to mix everything well without crushing the biscuits.
  8. Add the mixture to a sheet of baking paper distributing the mixture lengthways.
  9. Roll the paper with the mixture inside into a sausage shape, twisting the edges of the paper so the mixture doesn't escape.
  10. Add the chocolate salami with paper to a sheet of cling film and wrap, taking care to seal the edges.
  11. Put in the fridge to chill for 3 hours.
  12. After 3 hours, remove the cling film and paper. Dust with icing sugar and cut into slices. Enjoy your chocolate salami!
