Danish Æbleskiver (Traditional Pancake Balls)

Use this cooking conversion tool to help you convert to the unit of your choice.

 

Ingredients:

  • 250 g all-purpose flour
  • 15 g sugar
  • 1 tsp ground cardamom
  • 1 tsp baking soda
  • 500 ml buttermilk
  • 2 eggs
  • Zest of one organic lemon
  • Butter for frying

 

Instructions:

Combine the flour, sugar, ground cardamom, and baking soda. Whisk in the buttermilk gradually until the batter is smooth. Then add the eggs and lemon zest and mix until fully incorporated. Place your æbleskive pan over medium heat and fill each hole about ¾ full with batter. When the edges start to set and bubbles form, use a skewer or knitting needle to gently turn each æbleskive a quarter turn. Continue turning until they are golden brown and cooked through. Serve warm with powdered sugar and jam.
